Is it possible to use "dbEditFlds" to input default values into a field when the Add or Edit button is pressed and not have that field appear on the AddEdit screens?

No,But you can set the default field value and set ->
X.dbEditAddROFlds="fields,...."
in (V2) to accomplish the same purpose. You should really let user see the defaults instead of hiding them which would cause problem...
