Can I backup a db which is on server1 by sitting at server2 by way of running a script on server2.

Yes. If you can register server2 from server1, you can use Enterprise Manager or use t-SQL. I prefer the latter. Remember, that drive mappings, etc. are relative to the server you're sitting at.

you another option would creating a multi server backup job. Therefore you need to register the second server and then under in EM select SQLServer Agent/Multiserver administration.
But be carefull with the drive you select. This drive would be a drive on the target server.
